  • 120–150g chicken breast, sliced

  • 4–5 mushrooms, sliced

  • ½ carrot, thinly sliced

  • ½ cup broccoli florets

Seasoning

  • 1–1½ tbsp light soy sauce

  • 1 clove garlic, minced

  • Black pepper, to taste

Cooking

  • 1 tbsp neutral oil (canola / sunflower)

To finish (optional)

  • Sesame seeds

  • Chopped scallions or parsley

  • A few drops of sesame oil


Step-by-Step Instructions

1) Cook the noodles

  1. Bring a pot of water to a boil.

  2. Cook noodles until just tender (al dente).

  3. Drain and set aside.

Tip: Slightly undercook the noodles—they’ll finish cooking in the pan.


2) Stir-fry the chicken

  1. Heat oil in a pan over medium-high heat.

  2. Add sliced chicken in a single layer.

  3. Stir-fry until lightly golden and cooked through.

  4. Remove from the pan and set aside.


3) Cook the vegetables

  1. In the same pan, add a little more oil if needed.

  2. Add garlic and stir briefly until fragrant.

  3. Add mushrooms, carrots, and broccoli.

  4. Stir-fry until mushrooms soften and vegetables are just tender but still vibrant.


4) Combine & season

  1. Return chicken to the pan.

  2. Add cooked noodles.

  3. Drizzle in light soy sauce and season with black pepper.

  4. Toss everything together until evenly coated and heated through.


5) Serve

  • Transfer to a bowl.

  • Sprinkle with sesame seeds and fresh herbs.

  • Optional: finish with a few drops of sesame oil for aroma.
